Steak Fajitas

Recipe Introduction
Sirloin or flank steak may be used in place of a skirt steak.
List of Ingredients
1 1/4 lbs skirt steak, well trimmed
2 garlic cloves, finely chopped
1 tbsp chili powder
1 tbsp lime juice
1 tbsp peanut oil
1/2 tsp salt
1/4 tsp black pepper
8 to 12 flour tortillas
1 can (16 oz) refried beans
8 romaine lettuce leaves, shredded
1 cup salsa
1 avocado, peeled and diced
1/4 cup pickled sliced jalapenos (optional)Recipe
Cut steak into 6-inch lengths. In a medium bowl, stir together garlic, chili powder, lime juice, peanut oil, salt and pepper. Add the steak and toss to completely coat. Set aside while you preheat broiler or prepare bbq grill.
Divide tortillas into two batches and wrap each in foil. In a small, nonstick skillet over medium-low heat, heat refried beans, stirring occasionally until warmed through.
Remove steak from marinade and discard marinade. Broil steak about 1 inch from broiler or about 2 inches from the heat source on an outdoor grill for about 3 minutes per side, or until well browned on the outside and medium-rare on the inside. Set the steak aside for 3 to 4 minutes. Warm tortillas on the grill or in a 350 degree oven for 5 minutes.
To serve, arrange lettuce, salsa, avocado and jalapenos (if desired) in separate bowls. Slice the steak across the grain into thin slices and arrange on a serving platter. Let each person assemble his or her own fajita by mounding the beans, steak and garnishes on a tortilla.
