Golden Gate Chow Mein

1 lb lean pork steak (about 2 large steaks)
½ cup chopped onion
2 ½ tbsp soy sauce
2 cups beef broth*
3 tbsp cornstarch
1 can (3 oz) sliced mushrooms, drained, reserve ¼ cup liquid
1 can (16 oz) Chinese vegetables, drainedRecipe
Trim excess fat from meat. Cut meat diagonally into very thin strips. Lightly grease large skillet with excess fat. Brown meat on both sides. Stir in onion, soy sauce and broth. Cover; simmer 30 minutes.
Blend cornstarch and reserved mushroom liquid; gradually stir into meat mixture. Add mushrooms and Chinese vegetables. Heat to boiling stirring constantly. Boil and stir one minute. Serve over chow mein noodles or rice.
*Beef broth can be made by dissolving 2 beef bouillon cubes in 2 cups boiling water or use canned beef broth.
