    6 oz uncooked spinach fettuccine
    1/4 cup butter
    1/2 cup chopped onion
    1/2 medium yellow pepper, cut into thin strips
    1/2 medium red pepper, cut into thin strips
    1 tsp finely chopped fresh garlic
    1 lb boneless skinless chicken breasts, cut into 3 x 1/2-inch strips
    1/2 tsp salt
    1/4 tsp coarsely ground pepper
    3/4 cup half and half
    1/4 cup freshly grated Parmesan cheese
    1 cup Mozzarella cheese, shredded

    Cook fettuccine according to package directions. Drain; keep warm.

    Meanwhile, in 10-inch skillet melt butter until sizzling; add onion, peppers and garlic. Cook over medium-high heat until vegetables are crisply tender (2 to 3 minutes). With slotted spoon, remove vegetables from pan. Set vegetables aside; keep warm.

    Add chicken strips to skillet. Continue cooking, stirring occasionally, until chicken is no longer pink (7 to 9 minutes). Reduce heat to low. Add hot cooked fettuccine, vegetable mixture and half and half. Cook, stirring constantly, until heated through (3 to 5 minutes).

    Add 2 tbsp parmesan cheese and mozzarella cheese. Continue cooking, stirring constantly, until mozzarella cheese is melted (1 to 2 minutes). Sprinkle with remaining parmesan cheese; serve immediately.
