    6 oz (2 cups) uncooked mostaccioli or ziti pasta
    1 tbsp butter
    1 1/4 lbs boneless skinless chicken breast strips
    1 medium onion, cut into thin wedges
    1/2 medium green pepper, cut into thin strips
    1/2 medium red pepper, cut into thin strips
    1/2 medium yellow pepper, cut into thin strips
    1/3 cup chopped fresh cilantro
    1/3 cup sliced pitted ripe olives
    1/3 cup prepared pesto
    2 tsp copped serrano or jalapeno pepper

    Cook pasta according to package directions. Drain; keep warm.

    Meanwhile, in 12-inch skillet melt butter until sizzling; add chicken strips. Cook over medium-high heat, stirring constantly, until lightly browned (about 4 minutes). Stir in onion and peppers. Continue cooking, stirring constantly, until chicken is no longer pink (6 to 8 minutes).

    Stir in hot cooked pasta, cilantro, olives, pesto and chile pepper. Continue cooking, stirring constantly, until heated through.
