1 small onion, chopped
2 tbsp chopped green pepper
2 tbsp vegetable oil
2 cups cooked rice
1 can mushroom stems and pieces, drained
1 can water chestnuts, drained and sliced
2 tbsp soy sauce
3 eggs, beatenRecipe
Cook and stir onion and green pepper in oil in skillet until onion is tender. Stir in rice, water chestnuts, mushrooms and soy sauce. Cook over low heat, stirring frequently, 5 to 7 minutes. Stir in eggs; cook and stir until eggs are done, 4 to 5 minutes longer.
