German Potato Salad

Recipe Introduction
Some prep time is required to get this dish simmering, but then no supervision is required. Buy precooked bacon to save time.
List of Ingredients
4 ½ lbs medium red potatoes (about 15)
4 medium onions, thinly sliced (about 5 cups)
2/3 cup all-purpose flour
2/3 cup sugar
1 tbsp salt
5 tsp dry mustard
2 ½ tsp celery seeds
1 ¼ tsp pepper
1 1/3 cups water
1 cup cider vinegar
4 bacon slices, cooked and crumbled
2 hard-cooked large eggs, peeled and choppedRecipe
Place potatoes in a large Dutch oven; cover with water. Bring to a boil, and cook 20 minutes or until tender. Let cool slightly. Cut potatoes into quarters.
Place sliced onion in a 4-qt electric slow cooker; top with potatoes.
Combine flour and next 5 ingredients in a large saucepan; gradually add water and vinegar, stirring with a whisk until well blended. Place over medium-high heat, and cook until slightly thick, stirring constantly. Pour over vegetables in slow cooker.
Cover with lid; cook on high-heat setting 1 hour. Reduce to low-heat setting, and cook 4 hours. Sprinkle with crumbled bacon, and to with egg. Serve warm.
