Simple Chicken Soup

List of Ingredients
4 cups reduced-sodium chicken broth
2 scallions, trimmed and thinly sliced
1 garlic clove, finely chopped
¼ tsp salt
1/8 tsp pepper
¾ lb chicken breast, cut into bite size pieces
1 carrot, thinly sliced
2 ripe plum tomatoes, seeded and chopped
2 cups cooked brown riceRecipe
Combine broth, scallions, garlic, salt and pepper in a soup pot. Bring to a boil.
Add chicken and carrots. Reduce heat and simmer until chicken is cooked through, about 5 minutes. Add tomatoes and rice. Simmer just until heated through, about 2 minutes.
Variations: For Tex Mex add 1 tsp chili powder and ½ tsp cumin. Substitute corn for rice and sprinkle with cilantro. For Italian flavor add 2 tbsp minced basil. For Asian add 2 tsp soy sauce (omit salt), ¼ tsp dark sesame oil and a pinch of Chinese five-spice powder.
