Gingered Beef with Mixed Vegetables

6 servings; 3/4 cup beef mixture and 3/4 cup rice

1 1/2 pounds lean boneless round steak
1/4 cup low-salt soy sauce, divided
1/2 cup fresh orange juice
1 1/2 tbsp chopped fresh ginger
2 garlic cloves, chopped
1 1/2 tbsp cornstarch
2 tbsp brown sugar
2 tbsp hoisin sauce
1 (16 oz) package frozen broccoli, carrots, onions, red pepper, celery, water chestnuts, and mushrooms, thawed

Trim fat from steak; cut into 1/4 inch strips. Place steak strips, 3 tbsp soy sauce, and next 3 ingredients in an electric slow cooker; stir well. Cover with lid; cook on high 1 hour. Reduce to low and cook 2 1/2 hours.
Combine cornstarch, brown sugar, and remaining 1 tbsp soy sauce; stir until well blended. Add cornstarch mixture to beef mixture in slow cooker. Stir in hoisin sauce and vegetables. Cover with lid; cook on low 40 minutes or until vegetables are crisp-tender. Serve over rice.
