    8 items dry lasagna noodles
    3 cup salsa
    1 pound 90% lean/10% fat raw ground beef
    1 1/4 oz Taco Seasoning Mix
    1 cup fat-free Shredded Cheddar Cheese
    1 cup fat-free sour cream

    Recipe



    Preheat oven to 350 degrees. Cook lasagna noodles according to package directions. Drain and set aside.

    Coat a 9x13-inch baking dish with nonstick cooking spray and spread 1 cup of the salsa in the bottom; set aside.

    In a medium skillet, brown ground beef over medium high heat; drain. Stir in taco seasoning mix and 1 cup of the salsa. Cut each noodle in half; spread each half with 2 tbsp of the beef mixture and roll up.

    Place the roll ups in the baking dish. Pour remaining 1 cup salsa over the roll ups and sprinkle with cheese. Cover dish loosely with aluminum foil and bake 20 to 25 minutes, or until cheese is melted and roll ups are heated through. To serve, spoon 1 tbsp sour cream on each roll up.

    **The original recipe called for olives to be tossed on top before serving. I think this could be modified to be made into a lasagna and save some time.
