    Stuffed Pepper Meatloaf Muffins

    List of Ingredients




    2 pounds very lean ground beef
    2 large green peppers, chopped
    1/2 medium onion, chopped
    3 cups cooked white rice
    1 egg
    1/2 tsp. black pepper
    1/2 tsp. garlic powder
    1 (8 oz.) can tomato sauce

    Recipe



    Combine raw ground beef, egg, rice and green pepper, garlic powder and black pepper. Divide equally among 12 muffin cups sprayed with non-stick cooking spray. Bake at 350 degrees for 35-45 minutes or until done. Spoon tomato sauce over each muffin about 20 minutes before done.

    **NOTE: If you like your meatloaf with more of a dry texture, you can shape these into large meatballs and place on a broiler pan to bake.

    *I do NOT recommend using the muffin pans. They were impossible to clean! The grease and juices splattered everywhere.
