Black bean chili

Recipe Introduction
This is almost the simplest recipe I own :) I saute' onions & bell peppers (1/2 cup or 1 cup each, to taste) in a tsp of olive oil til they are just about soft, then add minced garlic and cook just a minute or so more. Then I either move it to the crockpot or continue cooking in the pot I'm using and add the rest of the ingredients. The crockpot is easier but on the stove you just have to stir it to keep it from sticking to the bottom :)
List of Ingredients
1/2 cup or more of diced onions
1/2 cup or more of diced bell peppers
1-2 garlic cloves
1 tsp olive oil
1 15 oz can diced tomatoes
1 15 oz can tomato sauce
1 15 oz can pinto beans (this is optional - I like the way it looks to have two kinds of beans)
2 15 oz cans black beans
1 4oz can green chiles (or more to taste, or you can use Rotel tomatoes w/chiles)
1/2 package mild chili seasoning
garlic, salt and pepper.
Optional add-in : cooked lean ground meat(6-8oz)
Optional toppings: sharp shredded cheddar cheese, diced green onions, tortilla or corn chips or rice. Recipe
Saute' onions and peppers til almost soft (translucent) then add minced garlic and cook 1-2 minutes more (do not burn garlic or let it get brown or it might be bitter).
Then move it to crockpot (optional - you can just cook it all in the same pot/pan). Add the remaining ingredients and stir. Crockpot cook on high 4 hrs or on low 6 hrs or simmer on the stove 20-30 minutes.
You can serve it over rice and top it with cheese and onions, or splurge and serve it over fritos for Frito pie.
