7 cups reduced-sodium chicken broth
1 pound uncooked boneless, skinless chicken breast
2 cups carrot
2 cups celery
2 cups onion
1 Tbsp thyme ( I used fresh only because I had it on hand!)
2 tsp table salt
1 tsp black pepper
2 tsp dried rosemary
1/4 cup white wine
2 tsp reduced-calorie margarine
1 Tbsp bay leaf
1 clove garlic
1 cup uncooked egg noodles
Recipe
Season chicken with salt, pepper and bake in oven at 350 for 15 minutes or until done. When cool, cut into chunks.
Saute vegtables in margarine and chicken stock. When soft, add garlic, saute one more minute. Add wine and cook 1-2 minutes to reduce liquid. Add chicken, left over chicken stock, spices,. Cook until veggies are soft. Add noodles in the last 1/2 hour or so.
You could leave out the noodles. Leaving out the noodles will reduce point total by 1 point.
