    Minty Middle Treasures

    List of Ingredients

    1/2 - cup sugar
    1/4 - cup packed brown sugar
    1/4 - cup shortening
    1/4 - cup butter or margarine -- softened
    12 - teaspoon vanilla
    1 - egg
    1 2/3 - cup all - purpose flour
    1/2 - teaspoon baking soda
    1/4 - teaspoon salt
    24 - rectangular chocolate mints, foil-wrapped (Andes)

    ALMOND FROSTING:
    1 - cup powdered sugar
    1 - Tablespoon plus 1 to 2 - teaspoons milk
    1/4 - teaspoon almond extract or vanilla
    Few drops of food color -- if desired
    Candy sprinkles

    Recipe

    Heat oven to 400 degrees.
    Beat sugars, shortening, butter, vanilla and egg in large bowl with a mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt.
    Shape about 1 tablespoon dough around each mint. Place 2" apart on ungreased cookie sheet. Bake for 9 - 10 minutes or until light brown.
    Remove from cookie sheet to wire rack. Cool completely.
    Dip tops of cookies into Almond Frosting. Sprinkle with candy decorations.
    Frosting: Mix all ingredients until smooth and thick enough to coat.
