Recipe Introduction
Valerie says, "Here is what I came up with. It is a moist bar with a good banana flavor. The frosting doesn't harden up at all, so the bars should be eaten with a fork, not with your hands. I was a little worried about how the frosting would hold up with the banana in there, but the lemon juice must have preserved it, since it didn't turn brown."
List of Ingredients
Bars:
2 c flour
2 tsps baking powder
1/2 tsp salt
3/4 c butter -- softened
1/2 c sugar
2/3 c brown sugar
1 1/2 tsps vanilla
1 c mashed ripe bananas -- (about 2 bananas)
1 egg
1 1/2 c miniature chocolate chips
Banana Frosting:
1/2 ripe banana -- mashed
2 tbsps butter -- melted
1/4 tsp salt
1 tsp vanilla
1 tsp lemon juice
2 cups (maybe a little more) of confectioner's sugar
Recipe
Combine flour, baking powder, and salt in a small bowl. Beat butter and sugars until smooth and creamy. Add egg, vanilla, and banana and beat well until combined. Add flour and mix until just combined. Do not overmix. Stir in mini chips by hand. Spread in a 13x9 pan and bake in a preheated 350 degree oven for 25 to 30 minutes or until a toothpick comes out clean. Cool the bars on a wire rack. Frost the cooled bars with Banana Frosting.
