Mocha Peanut Butter Pecan Bars

1 cup butter or margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 egg yolks
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup Sunspire Organic Semi-Sweet Chocolate Chips
1 cup Sunspire Peanut Butter Chips
½ cup pecans, chopped
25 caramels, unwrapped
¼ cup heavy whipping cream
1 rounded teaspoon instant coffee
Recipe
In a large mixing bowl, cream butter and sugars. Beat in the egg yolks and vanilla; mix well. In a small separate bowl, whisk together the flour, baking powder, baking soda, and salt; gradually add to creamed mixture. Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle dough with chips and chopped pecans and pat lightly into dough.
Bake at 350 degrees for 25-30 minutes or until golden brown. Cool on a wire rack.
For topping, place unwrapped caramels, cream and instant coffee in a small saucepan and heat on low stirring often until caramels are melted and mixture is blended. Drizzle over cookie and cut into bars.
Servings: Yield: 2 doz bars
