    I have several recipes for pumpkin bread that are really good. This is just one of them. I will probably post more.

    List of Ingredients






    5 eggs
    1-1/4 cups vegetable oil
    1 15-ounce can solid pack pumpkin
    2 cups all-purpose flour
    2 cups sugar

    2 3-ounce packages cook-and-serve or instant vanilla pudding mix

    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon salt


    Recipe





    In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture.
    Pour into 5 greased 5 x 2-1/2 x 2-inch loaf pans. Bake at 325 degrees F for 50-55 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes; remove from pans to cool completely.

    NOTE:Bread may also be baked in 2 greased 8 x 4 x 2-inch loaf pans for 75-80 minutes.
