My husband's all time favorite rhubarb recipe. I like it too.

List of Ingredients

Knobby Rhubarb Cake
1 cup sugar
1/4 cup melted margerine (I use butter or Vegetable oil)
1 egg
3 cups diced rhubarb
1/2 cup chopped walnuts
1 tsp. vanilla
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp. salt
1/4 tsp cinnamon
1/4 tsp nutmeg




Recipe


Cream sugar, margerine, egg and vanilla. Sift flour to spices; add to creamed mixture. Stir in rhubarb and nuts. Turn in to a greased and floured 8" square pan. Bake at 350 degrees for 45 minutes or until done.
