White Christmas Chili

3 teaspoons olive oil
2 onions, thinly sliced
2 to 4 cloves garlic, minced
2 cups chicken broth
1 cup white wine
1/4 cup fresh squeezed or bottled lime juice
2 cans cannellini or Great Northern beans, drained and rinsed
1 can green chilies, chopped
1 jalapeno pepper, stemmed, seeded and minced
4 tablespoons minced fresh cilantro or 4 teaspoons dried
1 teaspoon oregano dried
1/2 teaspoon ground cumin
1/4 teaspoon cinnamon
3 cups cooked turkey or 3 cups cooked chicken breasts, cubed
1 cup Monterrey Jack or Pepper Jack cheese, shredded
Recipe
Pour oil in a large pan and place over medium-high heat. Add onions and garlic; stir until onions are golden and taste sweet, about 20 minutes. Add broth, wine, lime juice, beans, green chilies, jalapenos, cilantro, oregano, cumin, and cinnamon. Bring to a boil over high heat; lower heat and cover. Simmer for 15 minutes. Stir in Honeysuckle turkey or chicken and cheese. When turkey is heated through and cheese is melted ladle into bowls. If desired garnish with diced tomatoes and/or fresh cilantro leaves.
