Creamy Lemon Mousse

Serve this versatile French dessert on its own, as a pie filling, or layered with fresh berries for a refreshing parfait.
List of Ingredients
2 large lemons
1/2 cup sugar
1/4 cup (1/2 stick) butter, cut in pieces
2 eggs
2 egg yolks
1/8 teaspoon salt
1/2 cup heavy cream

Preparation Time: 15 minutes plus chilling
Cooking Time: 10 minutes
Serves 4
1. Grate enough peel from the lemons to measure 2 teaspoons. Squeeze lemons to make 1/2 cup juice.
2. In a medium heatproof bowl set over a pan of water or in the top of a double boiler, whisk together lemon peel, juice, sugar, butter, eggs, egg yolks and salt. Cook over low heat, whisking constantly, until mixture is the consistency of honey, about 7 minutes.
3. Remove pan from heat and cool lemon mixture to room temperature. Cover; chill until set, about 2 hours.
4. In a medium bowl with an electric mixer set on high, whip cream until soft peaks form. Fold into lemon mixture. Spoon into a serving dish. Serve or cover and chill for up to 4 hours.
