    List of Ingredients




    8 chicken breasts, boned
    flour to dredge chicken
    4 Tbsp. corn oil
    1 1/2 cup chicken stock
    1 tsp. salt
    pepper to taste
    1 clove of fresh garlic, crushed
    2 Tbsp. dry sherry
    3 Tbsp. soy sauce
    2 Tbsp curry powder
    3 Tbsp honey
    3 Tbsp chopped parsley
    4 apples. peeled and sliced
    1/2 cup currants or raisins
    1/2 cup walnuts (optional)

    Recipe



    Dredge chicken breast in flour. Heat oil and saute chichen on medium high heat until golden.
    Remove from pan. In same pan cook together chicken stock, salt, pepper, garlic, soy, sherry, curry, honey and parsley; until mixture just begins to boil.
    Turn down heat and return breasts to pan. Add apples, currants or raisins and walnuts if desired.
    Cook uncovered until apples are soft and sauce is thickened.

    Serves 8
