List of Ingredients
5 boneless, chicken breasts (Recipe says to cut in 1" pieces, but I left whole)
S & P
3 T Butter
1 Medium onion
1/2 lb sliced mushrooms
1 T flour
1 C Chicken broth
1/2 c Sour cream
1 T Dijon mustard
Recipe
Season chicken with salt and pepper. Melt 2 T butter in skillet over medium high heat. Add chicken and cook until opaque.
Transfer to serving dish/cover to keep warm. Add onions and mushrooms to skillet and cook approx 6-8 minutes. Add remaining butter, flour and cook 3 minutes. Whisk in broth and cook another 5 minutes until thick and creamy. Add chicken back in, dijon mustard and sour cream. Heat all the way through approx 3 minutes, but do not bring to a boil. You can serve this over rice, or in my case I had some leftover spaghetti noodles that worked out just fine.
