1-1/2 tablespoons vegetable oil
1 onion, chopped
1 4-1/2 ounce can chopped green chilies
1/2 teaspoon turmeric
1/4 teaspoon ground cinnamon
3/4 cup rice
1 14-1/2 ounce can chicken broth
2-1/2 tablespoons water
1 bay leaf
1/8 teaspoon cayenne pepper
Chopped green onions
Recipe
In a large saucepan, heat oil; add onions and chilies. Cook, stirring constantly, until onions are translucent. Stir in turmeric and cinnamon. Add rice and stir for 2 minutes. Add chicken broth, water, bay leaf, and cayenne; bring to a boil. Cover and cook for 20 minutes or until liquid is absorbed. Sprinkle green onions on top before serving.
