Julia Child's Chicken Salad-

Meat from 4 large bone-in chicken breasts (4 pieces)diced
1/2 cup minced scallions
2 cups diced celery
1/3 cup fresh chopped parsley (packed)
Salt and freshly gound pepper to taste
Fresh lemon juice (1/2 to 1 lemon)
4 TB olive oil or salad oil
Optional 1/2 to 1 cup nuts, your choice
1-2 cups mayo (depends on your taste)
Recipe
Fold celery, 1/2 tsp salt and several grinds of pepper into the warm chicken; toss with 1TBS of lemon juice and 3 TBs oil. Correct seasoning, cover and let steep for 20-30 mnutes or longer in the refrigerator.
When ready to assemgle salad, drain all the juces from chicken. Fold in walnuts and as much mayo as you wish. Taste and correct seasonings. She suggests maskig with a coating of mayonaise if you wish.
