    This is my favorite non- traditional stuffing.

    List of Ingredients




    WATER CHESTNUT STUFFING

    1 cup chopped onion
    1/2 cup chopped green peppe1/2 cup sliced celery
    1 cup (1/2 lb) butter
    8 cups bread cubes, toasted
    2 cups, sliced water chestnuts
    1 tablespoon soy sauce
    1 tbsp. grated fresh ginger


    Recipe




    Saute onion, green pepper and onion in butter until limp. Combine with bread cubes, water chestnuts, soy and ginger; toss lightly.
    If mixture is very dry add a little hot water to moisten slightly.
    Makes 10 cups of stuffing.

    I got this recipe from a Sunset cookbook in 1964, the year I left San Francisco for Saudi Arabia. I have been making it ever since.
