Recipe Introduction
This is the best coffee cake I have ever found. It's very light and really easy. You can also add different kinds of nuts if you wish. Personally I add less sugar into the cake- the frosting is sweet enough.
List of Ingredients
CAKE:
175g (6oz) self rising flour
5ml (1tsp) baking powder
175g (6oz) soft margarine
175g (6oz) caster sugar
3 eggs, medium
20ml (4tsp) instant coffee dissolved in 20ml (4tsp) hot water
TOPPING:
175g (6oz) icing sugar
25g (1oz) butter
15ml (1Tbsp) milk
2.5ml (1/2) vanilla essenceRecipe
Cake:
Sift the flour and baking powder into a bowl. Add all the other ingredients and beat together until creamy. Pour the mixture into 20cm (8") greased tin and bake for 25-30 minutes in the preheated 160C, 325F oven. Cool the cake.
Topping:
Sieve the icing sugar into a bowl. In a small saucepan heat together the butter, milk and vanilla essence until the butter is melted, then remove from the heat. Add the icing sugar to the pan in one go and beat until smooth. Spread on your cake.
