    You can use fat-free half & half milk and Splenda® to make this filling for diabetics. It also helps if you make the pie shell with canola oil instead of solid shortening.

    List of Ingredients




    3 eggs
    1 cup half and half milk
    1 cup sugar
    1 pinch salt
    1 teaspoon vanilla
    rhubarb, sliced apples, or sliced peaches
    1 pie shell -- unbaked


    Recipe



    Combine ingredients. Cover bottom of pieshell with favorite fruit. Fill pie shell with mixture and bake at 375ºF. for about 1 hour. Test with a knife and if it comes out clean the pie is done.

    This pie can be made without fruit. Sprinkle top of filling with nutmeg.

    Yield:
    "1 9" pie"
