    LEMON MERINGUE PIE

    List of Ingredients




    1 1/3 cups sugar
    1/2 cup cornstarch
    1/4 teaspoon salt
    1 3/4 cups water
    4 eggs -- separated, [save whites for meringue]
    2 tablespoons margarine
    1/2 cup lemon juice (or juice from 4 lemons)
    1 tablespoon lemon rind

    1 9" baked pie shell

    Recipe




    Combine sugar, cornstarch, and salt in saucepan. Gradually stir in water. Cook, stirring constantly until it comes to a boil. Boil 1 minute. Remove from heat. Beat egg yolks slightly, slowly stir in 1/2 cup of hot mixture. Slowly mix in rest of hot mixture. Cook, stirring for 2 minutes. Remove and stir in margarine and lemon juice. Pour into crust and top with meringue.

    Yield: 1 9" pie
