    Easter Ham and Cheese

    List of Ingredients




    3 lbs. ricotta
    3 lbs. lean boiled ham
    3 lbs. fresh unsalted cheese
    2 cups mild grated cheese
    1 1/2 doz jumbo eggs

    Dough:
    2 1/2 lbs. flour
    1/2 lb. Crisco (melted and cooled)
    1 T salt
    1 t. baking powder
    4 eggs
    1 1/2 cups milk
    1/2 cups sugar
    1/2 t. vanilla

    Recipe



    Cut up ham and fresh cheese into 3/4" squares
    Mix with grated cheese and eggs in large bowl and set aside.

    Dough:
    In large bowl mix flour, salt, baking powder.
    Make well, add beaten eggs, milk, ssugar, vanilla and cooled Crisco.
    Mix well.
    Then work on board until smooth.
    Take amount needed for each container and roll thin.
    Put in dish and let dough hang over 1"
    Fill with filling them lap edge over.
    Place strips of dough over top.
    Use yolk of egg to cover dough strips.
    This recipe will make 4 11x7 dishes and 1 round 8" dish.
    Bake at 350 for 50 minutes, then 325 for 15 min.
    Serve cool or better still cold.
