    I first made this when my vegetarian son was visiting. I was making submarine sandwiches with a variety of do it yourself choices so I used a variety of marinades and cheeses so we could do Greek or Italian. The charcoal flavor was so great I couldn't taste a particular marinade so I used Italian dressing for everything.
    Submarines are great with the French bread toasted on grill and provolone or feta melted before stacking veggies.
    I do not marinate the mushrooms; think they absorb the marinade. I just toss them in marinade before grilling.
    In the future I will cut up everything and used grill woks; it seems easier to watch for burning than placing long horizontal slices on grill.

    List of Ingredients




    Onions
    Red and green peppers
    Eggplants
    Summer squash
    Zucchini
    Mushrooms
    Italian dressing

    Recipe



    Slice eggplants, squash and zucchini in long strips.
    Cut peppers in strips.
    Slice or quarter onions.
    Marinate in Italian dressing for 1-2 hours.
    Add mushrooms and toss in marinade before grilling.
    Place strips of eggplants and squash on grill, watching carefully for burning.
    Put onions, peppers and mushrooms in grill wok, stirring frequently to prevent burning.
    When all golden brown, return to pan.
    For party I chopped all into smaller pieces.
    For submarines you might like the eggplants and squashes in long strips.

    Note: I found sliced tomatoes not to keep shape. You might like to add cherry tomatoes to the marinade and the wok. If I wanted sliced tomatoes for a sub, I would marinate them and put directly on sandwich.
