Tabbouleh
List of Ingredients
1 cup bulgar (cracked wheat)
4 bunches parsley
2 tomatoes
1 onion
4 T. lemon juice
1 t. salt
1/2 cup oil
1 t. dried mint
1 head lettuce
Recipe
Wash bulgar and set aside for 1 hr to soak.
Remove parsley leaves from stems and discard stems.
Wash and chop parsley leaves, tomatoes, and onion.
Add to soaked bulgar.
Add all other ingredients and mix well.
Let stand about 15 min. before serving so that juices can be absorbed by bulgar.
Serve on bed of lettuce.
