    Fricasseed chicken

    From Better Homes and Garden Meat Cookbook, 1960

    List of Ingredients





    1/2 cup enriched flour
    2 t salt
    2 t paprika
    2-3 lb ready to cook young chick, cut in pieces
    1/4 cup fat

    1 cup water
    2 small onions, sliced
    2 bay leaves
    1/2 cup chopped celery leaves
    2 t salt
    dash pepper

    milk
    1/3 cup enriched flour
    1/2 t salt
    1/4 t kitchen bouquet

    Recipe




    Mix flour, salt and paprika.
    Coat chicken.
    Brown in hot fat in skillet or pressure pan.
    Add next 6 ingredients.
    In skillet, cook covered 1 hr. or until tender.
    In pressure pan cook at 15 lbs pressure for 35 min.
    Allow pressure to go down normally.
    Remove chicken.
    Strain broth.
    Add milk to make 3 cups.
    Shake 1 cup of liquid with 1/3 cup flour to blend.
    Add remaining liquid.
    Return to skillet.
    Cook and stir until gravy is thick.
    Add 1/2 t salt and kitchen bouquet.
    Pour over chicken
    4-6 servings
