    Mashed Yams with Sugar & Spice

    List of Ingredients




    6 lbs yams
    1 cup brown sugar
    1/2 cup cream or half & half
    6 T butter
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp allspice
    1 T vanilla extract
    salt
    1/2 cup chopped pecans

    Recipe



    Place yams on baking sheet. Pierce in several places with a fork. Bake until tender when pierced with a fork, about 1 hour.

    Butter a 2 to 3 qt. baking dish. Halve yams & using a spoon. scrape the flesh from the skins into a large bowl. Add 3/4 cup brown sugar, cream, butter, cinnamon, nutmeg, allspice & vanilla. Using mixer set on med. & beat until smooth, about 2 min. Season to taste w/ salt. Spoon mixture into baking dish. Sprinkle w/ pecans & 1/4 cup brown sugar.

    Bake until heated through, about 30 minutes

    This freezes well too!!!
