1 lb. crab meat
1 Tbsp. parsley
10 saltine crackers
1 egg
1 Tbsp. Old Bay
2 Tbsp. mayonnaise
1 tsp. mustard
Mix crab, egg, parsley and Old Bay. Roll saltines with
rolling pin to make crumbs. Add saltines, mustard and mayon-
naise to crab mixture. Mix thoroughly. Shape into cakes.
Make batter.
Batter:
1 egg
1 Tbsp. Old Bay
1 c. self-rising flour
1 Tbsp. parsley
Whip egg with spoon. Add flour, Old Bay and parsley.
Add enough milk to make consistency of pancake batter, but not
too thin. Mix well. Dip each cake in batter. Fry in hot oil.
