Mexican Hors D'oeuvre

2 cans Mexican bean dip
1/2 c. mayonnaise
1 c. sour cream
1 pkg. taco seasoning mix
2 avocados
juice of 1/2 lemon
1/4 c. mayonnaise
2 tomatoes, chopped and drained
2 cans sliced black olives
1 bunch scallions, chopped
1 c. finely shredded Cheddar cheese
plain tortilla chips
On a serving platter spread a layer of bean dip. Mix
together 1/2 cup mayonnaise, sour cream and taco seasoning mix.
Spread over bean layer but keep within 1/2 inch all around
sides of bean dip (pyramid effect). Mash 2 avocados with lemon juice and 1/4 cup mayonnaise. Add this layer on top but within 1/2 inch of sour cream layer.
Mix together tomatoes, olives and scallions; put on top of last layer. Top with cheese.
Serve with tortilla chips to dip through all layers of Mexicandip. Serves 8 to 12.
