Oven-Fried Onion Rings

1 cup fine dry bread crumbs
2 tablespoons butter
Salt and pepper to taste(optional)
2 egg or egg whites
2 large onions, sliced 1/4 inch thick, separated into rings Recipe
Preheat oven to 450 degrees. Lightly spray a large baking sheet with vegetable oil cooking spray.
In a small mixing bowl, combine the bread crumbs and butter, along with the salt and pepper, if using. Mix well. Spread on a sheet of waxed paper on a separate cooking sheet.
Place the eggs or whites in a shallow dish. Dip the onion rings in the eggs, coating thoroughly, then in the bread crumb mixture. Place the coated onion rings in a single layer on the prepared baking sheet.
Bake for about 15 minutes or until the onions are tender and the coating is crisp and golden
