Amish Roast Pork

6 lb. pork loin roast
1/4 c. flour
1 1/4 tsp. salt
1 tsp. ground ginger
1/4 tsp. pepper
1 c. hot water
2 onions, thinly sliced
2 Tbsp. flour
1 1/2 c. water
Have meat dealer loosen chin bone. Rub pork with a
mixture of the flour, salt, ginger and pepper. Place pork fat
side up in a shallow roasting pan. Insert meat thermometer in
center of thickest part of meat, being sure bulb does not rest
in fat or on bone. Roast pork uncovered at 400 degrees for 45 min
utes. Reduce temperature to 350 degrees and continue roasting about 1 3/4 hours.
After the first hour, add 1 cup hot water and onions.
Baste every 15 minutes. Meat is done when internal temperature
of meat reaches 185 degrees. Place on warm platter. Stir 2 table-
spoons flour into liquid in pan. Stir constantly. Add 1 1/2
cups water; bring to boil and cook 1 to 2 minutes. Serve gravy
with roast pork. Makes 8 to 12 servings.
