    Calypso Chops

    1 cup canned chicken broth
    1/2 cup orange juice
    2 tablespoons lime juice
    2 tablespoons dark rum
    2 tablespoons brown sugar
    1 garlic clove, minced
    1/2 teaspoon salt
    1/2 teaspoon ground ginger
    6 (4-ounce) boneless pork loin chops


    In a self-sealing plastic bag combine chicken broth, orange juice, lime juice, dark rum, brown sugar, garlic, salt and ground ginger; stir to dissolve sugar salt and ginger. Add pork chops, seal bag, lay it in a shallow dish and refrigerate for 4-24 hours.

    Prepare coals or preheat grill and place grill rack 4 to 6 inches from heat source. Remove chops from marinade and discard leftover marinade. Grill chops quickly over indirect heat in covered grill 5 to 6 minutes per side.
