Filet of Fish in Fine Herbs

6 filets of grilling fish(tuna, salmon, red fish, etc.)
1/2 cup melted butter
1/2 cup vegetable oil
1 tbsp grated lemon peel
1 tbsp minced basil
1 tbsp chopped thyme
1/2 tsp chervil
1 tsp chopped parsley
1 tsp chopped dill
2 tsp black pepper
salt and Creole seasoning to taste
In a mixing bowl, combine butter, oil and all herbs other than pepper, salt and Creole seasoning. Wisk thoroughly to create marinade. Place the fish on a large cooking sheet and brush thoroughly on all sides with the flavoring liquid. Allow to sit at room temperate 30 minutes. While fish is marinating, grill to manufacturer's directions. A small amount of smoke wood may be added for flavor. When ready to serve, place fish on grill and cook 2-3 minutes on each side. Place the cooked fish onto the serving plate and top with 1/3 of remaining fine herb marinate
