    Grilled Chicken With Cha-Cha Salsa

    List of Ingredients




    2 jalapeno peppers, minced
    1/4 cup minced fresh cilantro
    1 (14 oz) can coconut milk
    2 Tsp lime juice
    4 Boneless Skinless Chicken Breast, cut into strips

    Cha-Cha Salsa

    1/2 cup chopped tomato
    1/2 cup chopped purple onion
    1/2 cup chopped papaya
    1/2 cup chopped green pepper
    1 or 2 jalapeno peppers, minced
    2 Tsp lime juice
    1/2 chili powder
    1 Tsp honey

    Stir well all ingredients. Cover & chill.

    Yld: 2 cups

    Whisk togther first 4 ingredients in a shallow dish; add chicken, tossing to coat. Cover; chill 1 hr. Drain; discard marinade. Thread chicken into skewers.

    Grill, covered, over medium high heat (350*-400*) turning often, 4 to 6 mins or until done. Serve with Cha-Cha Salsa.

    Yld: 4 servings
