Grilled Steak with Achiote Marinade

Achiote Marinade
1 (3 ½ oz.) cake achiote paste
2 fresh garlic cloves, roughly chopped
1 fresh jalapeño chile, roughly chopped
Juice of 1 lime
½ red onion, chopped
1 tsp. Mexican oregano
½ bunch cilantro, roughly chopped
1 cup fresh orange juice
½ cup olive oil
1 tsp. freshly cracked black pepper
Grilled Steak
4 (8 oz.) New York strip steaks
Kosher salt and pepper to taste
For the Marinade, place garlic, chile, lime juice, and achiote paste in blender. Puree. Add onion, oregano, cilantro, and orange juice and pulse until chopped and blended. Add oil and pepper and blend again.
Place steaks in shallow dish and pour marinade over steaks. Cover and refrigerate 1 ½ to 2 hours. Remove from refrigerator 30 minutes before grilling.
Prepare grill. Remove excess marinade from steaks and season with a little kosher salt and black pepper. When grill is hot, grill steaks 4-5 minutes on each side, depending on thickness, for medium rare.
