    Sweet Corn and Pork Skewers

    3 tablespoons olive oil
    1 tablespoon ground cumin
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    12 ounces pork tenderloin, cut into 1-inch pieces
    3 ears corn-on-the-cob, cut into 2-inch pieces
    2 small zucchini, cut into 1-inch pieces
    2 small sweet red bell peppers, cut into 1-inch pieces


    Preheat grill or broiler.

    In a large bowl, combine olive oil, cumin, salt and pepper. Add pork, corn-on-the-cob, zucchini and bell peppers; toss to coat. Let stand 10 minutes at room temperature.

    On eight (10- to 12-inch) metal skewers, thread pork chunks alternately with vegetable pieces. Grill or broil, turning occasionally, until meat is cooked through, 8 - 10 minutes. Serve immediately.
