Cheese Muffins

2 cups dry biscuit mix
1/2 cup butter, softened
1 cup sour cream
1 cup shredded cheddar cheese
garlic butter, optional
Lightly grease 12 cup muffin tin. Combine mix and butter with pastry blender, or two knives, until small balls form. Mix in sour cream and then stir in cheese. Fill muffin cups 2/3 full. Half fill any empty muffin cups with water. Option: Brush with garlic butter. Bake for 20 minutes.
