Cheese Popovers

1/2 cup (2 ounces) shredded Parmesan cheese, divided
1 cup milk
2 eggs
1 tablespoon butter, melted
1 cup all-purpose flour
1/4 teaspoon salt
Preheat the oven to 425°F. Coat a 6-cup muffin tin with nonstick cooking spray. Reserve 1 tablespoon Parmesan cheese.
In a large bowl, combine all the remaining ingredients, beating with a wooden spoon until smooth. Pour the batter into the muffin cups and sprinkle with the reserved Parmesan cheese.
Bake for 25 to 30 minutes, or until golden and puffy. Cool slightly before removing from the muffin cups. Serve immediately.
