    Cranberry Nut Bread

    my mom sent it to me
    2 Cups flour
    1 1/2 Teaspoons baking powder
    1/2 Teaspoon baking soda
    1/2 Teaspoon ginger
    1 Cup sugar
    1 Teaspoon salt
    1 Teaspoon cinnamon
    1/4 Teaspoon cloves
    3/4 Cup orange juice
    2 Tablespoons shortening
    1 egg -- well beaten
    1 Tablespoon grated orange peel
    1 Cup cranberries
    1/2 Cup nuts -- chopped

    Preheat oven to 350 degrees. Sift together dry ingredients. Cream orange juice, shortening, egg, and orange peel. Stir in sifted ingredients.

    Stir in chopped cranberries (I freeze fresh berries and chop them in a food-processor) and nuts. Turn into a 9 x 5 inch loaf pan, which has been greased on the bottom only. Bake 55 - 60 minutes, or until toothpick inserted in the middle comes out clean. Cool thoroughly before serving.

    Great for holiday breakfasts, and freezes well.
