Golden Buttermilk Biscuits

1 3/4 cups white unbleached all-purpose flour
1/4 cup pastry flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sugar
1/2 tsp. salt
1/4 cup shortening
3 tbsp. unsalted butter
2/3 to 3/4 cup buttermilk (see below)
milk or melted butter for brushing
Preheat oven to 425 F.
Combine flours, baking powder, soda, salt and sugar in a mixing bowl. Cut in shortening and butter until mixture is coarse and grainy. Sprinkle buttermilk over mixture and stir lightly with a fork to blend. Turn out onto a lightly floured board and knead 8-10 times, until mixture is just rollable.
Roll out 1/2 inch think and cut into 2 inch discs with a cookie cutter. Brush tops with melted butter or sweet milk and bake on a lightly greased cookies sheet (12-15 minutes) until golden.
Yield: approximately 1-1/2 dozen
