Skillet Cornbread
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 Tsp baking powder
1/2 tsp salt
1 Tsp sugar
1 cup buttermilk
1/4 cup bacon dripping or melted butter
2 lge eggs, lightly beaten
Grease 9 inch cast iron skillet; preheat in a 400* oven for 4 mins/
Combine first 5 ingredientin a large bowl; make a center of mixture.
Combine buttermilk, bacon drippings & eggs; stirring well; add to dry ingredients, stirring just until moistened. Pour into hot skillet. Bake at 400* for 20 to 25 mins or until golden. Remove from skillet & serve warm or at room temp.
