Zucchini Bread
2-1/2 cups sugar
3 cups flour (plain)
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 eggs
1 cup oil
3 tsp. vanilla
1 cup chopped walnuts
2 cups shredded zucchini (if they have a lot of seeds, scoop out
middles before shredding)
Preparation:
Preheat oven to 325 degrees. Grease 2 loaf pans. Mix dry ingredients in one bowl. In a separate bowl, mix wet ingredients. Add zucchini to wet ingredients. Gradually combine wet and dry ingredients. Bake 55 - 60 minutes at 325 degrees. If doubling recipe, bake 4 loaves for 75 minutes.
