30 Minute Apple Sausage Pancakes
Apple Sausage Pancakes
1/2 pound of bulk pork sausage, browned, drained and cooled
1 egg
2/3 c milk
2 Tb vegetable oil
1 c pancake mix
1/2 tsp ground cinnamon
1/2 c shredded peeled apple
Cider Syrup
1/2 c sugar
1 Tb cornstarch
1 c apple cider
1/8 tsp pumpkin pie spice
1 tbs lemon juice
2 tbs butter
In a bowl beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top, cook until second side is golden brown. For syrup combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil and cook and stir for 2 minutes or until thickened. Remove the the heat and stir in butter until melted. Serve warm over pancakes.
