Ham and Egg Skillet
3 medium uncooked potatoes, peeled and diced
1 tb butter
1/4 c chopped onion
1/4 c chopped green pepper
1 c fully cooked cubed ham
3 beaten eggs
1 c shredded cheddar cheese
salt and pepper to taste
In a skillet saute potatoes in butter until tender and golden brown. Add the onion and green pepper and saute until tender crisp. Add ham, eggs, cheese, salt and pepper. Cook until the eggs are completely set, stirring occasionally
