Beef Strips With Oyster Sauce

1 lb. beef top round steak
1/2 c. cold water
1 Tbsp. cornstarch
2 Tbsp. oyster sauce
2 Tbsp. dry sherry
1 Tbsp. soy sauce
1/2 tsp. sugar
2 Tbsp. cooking oil
1 large onion, thinly sliced
and separated into rings
hot cooked rice
Slice beef thinly across the grain into bite size
strips. For marinade, blend water into cornstarch; stir in
oyster sauce, sherry, soy sauce and sugar. Mix well. Add
beef; let stand 30 minutes at room temperature. Drain meat,
reserving marinade. Set aside.
Preheat wok or large skillet over high heat; add oil.
Stir-fry onion in hot oil about 3 minutes or until crisp and
tender. Remove onions. Add half the beef to hot wok or
skillet; stir-fry 2 to 3 minutes or until browned. Remove
beef. Stir-fry remaining beef 2 to 3 minutes. Return all meat
to wok or skillet.
Stir reserved marinade and stir into beef. Cook and
stir until thickened and bubbly. Stir in onions, cover and
cook 1 minute. Serve at once over hot rice.
